Latte’da to the Rescue!

 

Let’s be honest—you can’t have a full day of inspiration and connection without the right fuel. At the recent She Is conference, the energy was high, but by mid-morning, the caffeine cravings were real. Thankfully, Latte’da was there to save the day!

 

They were a beacon of hope for tired eyes, serving up perfectly poured cups that kept everyone buzzing and ready for the next session. It is amazing how a great cup of local coffee can make a special event even better.

An unconventional and joyful energy took over Lafayette this past weekend, centered at Flatirons Community Church.

 

The church hosted its 'She Is 2026' women's conference, drawing a massive crowd from across the Boulder Valley and beyond.

 

This year’s theme was “She Is Salty,” an electrifying call to action for women to embrace the unique “flavor” God gave them.

 

The atmosphere was more rock concert than church seminar, complete with a full-scale dance party and on-site tattoo artists celebrating faith with passion.

 

A powerful lineup of speakers took the stage, including world-renowned activist Christine Caine, spoken-word artist Hosanna Wong, and ministry founder Natalie Runion.

 

The ultimate message encouraged attendees to live authentically and use their unique gifts to bring grace and truth into their communities.

  • Winter Walkabout Music Showcase (Feb 7)

    • This huge music festival in downtown Longmont is next weekend, but tickets usually sell fast. It features 50+ local bands playing in different venues all day. It is widely considered one of the best local events of the year.

Monday, Feb 2 | Groundhog Day with "Flatiron Freddy"

    • Where: Chautauqua Ranger Cottage, Boulder (8:00 AM)

    • The Scoop: Skip Punxsutawney Phil. We have Flatiron Freddy. He will arrive (usually in style—past years have seen him in a canoe or bobsled) to predict if we get an early spring. It is a free, quirky local tradition that is guaranteed to make you smile.

 

Saturday, Feb 7 | "Trash the Runway"

    • Where: Macky Auditorium, Boulder

    • The Good News: This is pure creativity. Middle and high school students design high-fashion outfits entirely out of recycled materials (think milk jug ballgowns). It is inspiring, sustainable, and supports local STEM education.

Friday, Feb 13 | Winter Bike to Work Day

    • Where: All over Boulder Valley 

      • The Vibe: Even if you work from home, you can participate! There are usually breakfast stations set up all over town giving out free coffee and burritos to anyone on two wheels. It is a great excuse to get some fresh air.

      ❤️ Valentine's Day for "Non-Dinner" People (Saturday, Feb 14)

      • Pottery Date Night: Groundworks Art Lab in Boulder is hosting a wheel-throwing night. Get messy and make a bowl instead of just eating out of one.

      • Stargazing: Fiske Planetarium has a special "Celestial Celebration" with a live string quartet. Romantic and educational!

      • Stained Glass Workshop:  Colorado Glass Works is running a Valentine's class—perfect for friends (Galentine's) or couples.

Sunshine in a Bowl

 

Since the weather is warming up next week, here is a recipe that tastes like spring but warms you up like winter. It’s bright, golden, and guaranteed to lift your mood.

 

Ingredients:

  • 1 tbsp olive oil

  • 1 onion, chopped (yellow or white)

  • 3 carrots, sliced into coins

  • 3 cloves garlic, minced

  • 1 tbsp fresh ginger, grated (or 1 tsp powder)

  • 1 tsp ground turmeric (this gives it the "sunshine" color!)

  • 6 cups chicken or vegetable broth

  • 1 lb chicken breast (or a rotisserie chicken, shredded)

  • 1 cup orzo pasta (or rice for GF)

  •  
  • The Secret Weapon: Juice and zest of 1 large lemon

  • 2 handfuls fresh spinach

  •  

Instructions:

  1. SautĂŠ the Base: In a large pot, sautĂŠ the onion and carrots in olive oil until soft (about 5 mins). Add the garlic, ginger, and turmeric. Stir for 1 minute until your kitchen smells amazing.

  2. Simmer: Pour in the broth and add the raw chicken breasts whole (if using raw). Bring to a boil, then lower heat and simmer for 15-20 minutes until chicken is cooked through.

  3. Shred & Pasta: Remove the chicken, shred it with two forks, and set aside. Add the orzo (or rice) to the pot and cook for about 8-10 minutes until tender.

  4. The "Good News" Finish: Stir the shredded chicken back in. Turn off the heat. Stir in the spinach (it will wilt instantly) and the lemon juice/zest.

  5. Serve: Ladle into bowls. The soup should be a beautiful golden yellow.

💡 Editor's Tip:

Serve this with a slice of crusty bread to soak up the "liquid gold." It freezes beautifully if you want to save some for a snowy day later in February. Ginger and turmeric - Yummy!

  • Casa Juani (Boulder): Keep your eyes peeled for this one opening in February. It is a new Spanish eatery from chefs with serious Michelin-star backgrounds. They are bringing authentic tapas and a "Chef's Counter" experience to town.

  • In Longmont:

    • Kawaii Konbini: If you haven't been yet, this is adorable. It’s a Japanese-style market serving fluffy Tamago Sandos (egg salad sandwiches) and onigiri. A perfect "happy" lunch spot.

    • Red Cedar Bistro: Bringing excellent new Middle Eastern flavors to the north end of the valley.

  • In Boulder:

    • Maisonette: A new French bakery from pastry chefs Florian and Nali TĂŠtart. The "Good News"? Real, Paris-quality croissants are now available without a plane ticket.

    • Siren Cocktail Bar: If you miss the beach, head here (South Boulder). It has a "nautical tavern" vibe that feels like a mini-vacation.

Mountain Magic: Keystone is Calling!

 

The Good News: If you have been waiting for the perfect time to head up the hill, this is it.

Reports from the high country confirm that Keystone is having a spectacular stretch. The conditions right now are that "Goldilocks" mix skiers dream of: soft, forgiveable snow under bluebird skies.

Why I Love Keystone Right Now:

 

  • The Longest Days: It is one of the few places where the day doesn't end at 4:00 PM. Night skiing is open, meaning you can watch the sunset from the summit and cruise down under the lights. It’s a magical experience (and usually much less crowded!).

  • Family First: We have to shout out their legendary "Kids Ski Free" program. In a world where everything seems to cost more, this perk remains a huge win for families.

  • The Groomers: If you aren't into extreme moguls, Keystone’s long, wide, groomed runs (like "Schoolmarm") are basically a highway to happiness.

This week, we are grateful for The Noticeable Shift.

You might have felt it yesterday evening. It was 5:15 PM, and for the first time in months, the sky wasn't pitch black. It was a deep, twilight blue.

We are grateful that the days are winning. We are gaining about 2 minutes of sunlight every single day right now. That adds up to nearly 15 minutes a week—an extra quarter-hour of light to walk the dog, finish a project, or just see the mountains.

 

We are grateful for:

  • The "Fool's Spring": That moment when the thermometer hits 50°F in January and we all collectively decide to wear t-shirts.

  • Quiet Mornings: The snow dampens sound, making our busy towns feel peaceful for a few extra hours.

  • Resilience: The fact that our trees, our gardens, and our neighbors all know how to weather a cold snap and bloom anyway.

The Challenge: This week, try to catch the sunset. It’s happening later than you think. Don't miss the show.
